Our Story

The Restaurant's Spirit

Two passionate people, one shared vision

At the foot of the Septmonts Keep, in a characterful building warmed by stone and history, Laurine and Sébastien Berthaut are writing their own story. Children of the Aisne terroir, they grew up with a taste for good things and the desire to share them.

Trained together at the CFA in Laon and forged in the kitchens of prestigious houses in Reims and Paris, they return to their roots with a clear ambition: to offer traditional, generous, and sincere cuisine in an exceptional setting.

The Duo

Laurine & Sébastien Berthaut

Sébastien, a Maître Restaurateur, works in the kitchen offering a seasonal, sincere, and homemade menu. Laurine manages the front-of-house, dedicated to providing a warm and attentive welcome.

Supported by their team of eight, they favor local products, such as vegetables from the gardens of Hautefontaine & Bethancourt en Valois, for a cuisine that reflects their values.
